The ground, dried, kibbled bark of Cinnamomum Burmanii , also known as Indonesian Cinnamon, is a reddish brown powder with slightly sweet, pungent and earthy aroma. It has been recorded as being in use from ancient times. Apart from the uses in ancient South Asia, Egyptians used it in flavouring beverages and in the middle ages European recipes used cinnamon in both savoury and sweet dishes.
