Garam Masala, literally 'Hot Spice Mix' in Hindi, there are many versions of the blend in India with each household having its own iteration. A pungent spicy blend used for making curries with a depth of flavours. This mix consists of Coriander, Cinnamon, Cumin, Nutmeg, Cloves, Cardamom, Cassia, Ginger, Fennel, Black Pepper.
Traditionally simmered in the sauce for a long time, try sprinkling a little masala at the end of the cooking process to heighten the impact of the flavours.
