Black and white sesame seeds have very similar chemical compositions. The black variety is used as much for its aesthetic appeal as for its traditional uses in Japanese and Chinese cuisine. Traditionally used to flavour salads, tofu, dipping sauces, cakes, biscuits, dumplings and desserts. Dry roasted and blended with salt it makes the ubiquitous Japanese table salt
called goma-shio (‘sesame salt’).
